One Pan Cheesy Mexican Rice - Fodmap Approved


I ran across this recipe from and was skeptical. However, it was delicious! I love anything Mexican, so it's a win over here. Kid approved as well. Remember, if you are eating FODMAP that you choose the approved tomato products. 


Cooking spray

1 1/4 pound ground beef

2 tsp chili powder

2 tsp cumin


2 1/2 cups brown rice

15 oz can diced tomatoes

15 oz can tomato sauce

2 cups water

8.75 oz can of low sodium corn

4.5 oz can of green chilies

scallion tops

4 oz colby jack or cheddar cheese


Add ground beef, chili powder, cumin, salt and pepper. Cook meat for 6 to 7 minutes. Add rice, tomato sauce, diced tomatoes and water. Cover and simmer for 20 to 30 minutes for instant rice or 40 minutes for regular rice. Stir in corn, chilies, scallions and cheese. Heat until cheese melts and enjoy.
