Nana's Chicken Salad

  • 1 whole organic chicken
  • ½ cup celery, chopped
  • ½ cup onion, chopped
  • ½ cup to ¾ cup mayo (You can use low fat mayo or half mayo/half plain yogurt)


Cook chicken in boiling water until falling off the bone.  My mother uses a crock pot and claims that it makes the broth richer.  When done, de-bone and mix with celery, onion, salt and pepper to taste, and mayo.  She also mixes the ingredients with a mixer to make the salad smoother.  As you are mixing, add small amounts of the broth a little at a time for desired consistency.  

Must do: Save the remaining broth for all kinds of things too.  And save the bones for bone broth! Repeat… save the broth.

P.S.- I have been known to eat my moms all three meals a day until I’m out.  Put on a bed of lettuce with some pitas for my favorite way of eating it!
